So recently I replaced the sprockets and chain on my 2015 Street Triple. This was my first time ever doing something like this, but with the help of my Haynes manual all seemed to go well.

Until....

About three weeks after originally fitting the new sprocket and chain kit (today). I was doing some routine chain maintenance and after taking the front sprocket cover off. I quickly notice that the front sprocket nut and washer had vanished.

I have not noticed any strange noises whilst riding and I'm 100% certain that I put the nut and washer back on as well as tightening to the torque setting specified in the Haynes manual. There is also no visible damage to any part of the bike, chain or sprocket cover.

Does anyone have any idea how this could have happened? How to prevent this from happening in the future? and more importantly, Where to buy new ones?

Most likely reason is you did not bend the washer back up to keep the nut from backing out.
