A two-day track day would definitely be more appealing, given the time/effort it takes for prep/travel. An alternative, or in addition to, to a banquet could be a reserved area for campers. There's something really cool about hanging around a campfire after a full day of riding that just can't be beat.

Open is the key word here. I brought my portable fire pit and as long as I kept the wire mesh cover over it they really didn't care.
