I'm sure your insurance company can explain your options to you, as every insurance company is different.
But they'll either fix it or total it, depending on the damage.
If they fix it - woo! You have your bike back....and maybe higher insurance bills in the future.
If they total it, then depending on your insurance, they may allow you to buy it back as a salvaged title for cheap and still give you a decent size check. Then you can fix it yourself, probably for cheaper, and use the extra money to buy new gear to replace the stuff you damaged in the fall (or to buy gear in the first place if you were dumb enough to ride without it). Either way - woo! You have your bike back.
If they don't allow you to buy back the salvaged title, they'll just give you a check, and you can go buy a new bike. Also, your insurance bills might go up in the future as well.
Either way, call your insurance, they can tell you more than we can.
